When talking about ” Brunch”, most people will think of a delightful sunday, enjoying Eggs Benedict and a nice hot coffee in a fancy café. In the late 1890s in UK, “Brunch” was prepared for hunters’ return as their late breakfast. This culture has spread quickly to the United States and has become a traditional to New Orleans. Recently, one of the most representative dish is Eggs Benedict which first appeared in Waldorf Astoria( or Delmonico) because of the passionate learning of New York. In the 1920s, the Prohibition Era made “Brunch” even more popular and has become excuse for the rich to drink in the morning.Since then on, French toast with Mimosa, Bloody Mary, or other kinds of cocktail were the trends and opened gate of marketing for special cocktails. Even after prohibition was repealed, “Brunch” not only served cocktails but also served coffee, special sparkling water and non-alcoholic cocktail.

Because Taiwan’s unique location, during the Vietnam War(1955-1975), the American army will come to Taiwan for vacation, they brought movies, pop music and tv drama into Taiwan. People can add any flavors of syrup or toppings such as grass jelly, topioca, coffee jelly, coconut jelly, pudding, aloe, taro balls and kinjac jelly to their drinks. “Bubble Tea” is one of the popular trends in the world.
